Carrot Methi Subzi


  • Carrots, cut into cubes: 2 cups (pls correct as shown)
  • Chopped fenugreek (methi) leaves: 2 cups
  • Cumin seeds (jeera): 1/2 tsp
  • Finely chopped onions: 3/4 cup
  • Green chillies, finely chopped: 3
  • Garlic, finely chopped: 1 large
  • Ginger, finely chopped: 12 mm ('/2 inch) piece
  • Turmeric powder (haldi): 1/4 tsp
  • Coriander (dhania) powder: 2 tsp
  • Oil: 2 tsp
  • Salt to taste


  1. Heat oil in a nonstick pan and add the cumin seeds.
  2. When they crackle, add the onions, green chillies, garlic and ginger, and saute for 2 minutes.
  3. Add the fenugreek leaves and sauté for another 2 minutes.
  4. Add the carrots, turmeric powder, coriander powder, salt, and 1 cup of water and mix them well.
  5. Cover and cook the mixture over a slow flame till all the moisture has evaporated and the carrots are tender.
  6. Serve the dish hot with chapatis.
